Fresh Peeled Pearl Onions​ - Red, White, and Gold - grown in Idaho, Colorado and Canada

Fresh Peeled Pearl onions have to be peeled before use. The onions need to topped and the roots need to be cut off and the skins need to be completely removed. We need to keep the onions dry so that they do not become mouldy after processing. We recommend washed before use. Fresh Peeled pearls are packed in a polyethylene jar. The size of pearl onions are small, marble-sized (1⁄4-inch to 1-inch diameter). White -skinned pearl onions are most common though the red skinned varieties are getting increasingly popular. The red variety have reddish-purple skin that is similar in color to large red onions and they are usually milder in flavor than white pearl onions.They are also available in the gold. Mild and sweet pearl onions are delicious eaten whole. They are very good roasted, pickled, or glazed, as well as in stews, braises, and gratins. Eating onions regularly help improve cardiovascular health and stabilize blood sugar levels, in addition to acting as an antioxidant and anti-inflammatory.

We will have retail peeled pearl onions available in May 2016. Private labels and custom packing will be available.

Currently we offer these in 4 x 5 pound jars and individual 5 pound jars. We carry this product year round and the onions are harvested in September or October and are refrigerated year round. The product should be washed prior to use.

Fresh Pearl Onions​- Red, White, and Gold are available in 10 oz vexar packages

We offer Fresh Pearl Onions grown in Idaho, Colorado, and Canada. The “true” pearl onion is a close relative of the leek, and may be distinguished from common onions by having only a single storage leaf, similar to cloves of garlic.

Because of its uniquely small size and a taste sweeter than that of a common onion, it is used in a variety of dishes. Pearl onions are excellent when pickled or creamed.

Best Buy Pearl onions are firm, heavy for their size and have dry papery skins. Pearl onions need to be dry and need to stored in a cool, dry place with good air circulation. Once cut, lightly wrap any unused onion in plastic, refrigerate and use within four days.

Fresh Cipolline Onions ​- gold color - grown in Idaho, Colorado, Canada, and Italy

Cipolline onions are small Italian onions approximately the size of a gold ball. They have a flattened appearance and have more residual sugar than other types of onions, which give them a sweeter taste. Pronounced chip-oh-Lee-nee, this is a small, flat, pale onion. The flesh is a slight yellowish color and the skins are thin and papery. The most popular size of the cipolline are from 2-2.5 inches.

Cipolline is the Italian word for “little onion”. Cipolline onions are a good type of onion to caramelize by cooking over the stove with butter or by roasting in the oven. The sugars will concentrate together and the result will not have the sharp flavor of a raw onion.

We offer the retail vexar packs of the Fresh Cipolline in the 8oz and 16oz and industrial pack come in 4 x 10 pound sacks. These are available year round.

Fresh Peeled Cipolline Onions

Fresh peeled cipolline onions are packed either in a polyethylene jar. They come usually in a 4 x 5 pound case or an individual 5 pound case. The optimum shelf life of the produce is two to three weeks when refrigerated at 32 degrees F. The product can be used to make pickled whole cipollines, antipasto mixes, sauces, soups, or any other product in which fresh cipolline flavor is desired.

The onions need to be topped and the roots completely removed. The other skin needs to be removed and then put in a jar. Cipolline onions need to be dry in order to maintain the shelf life. The product should be washed prior to use.

The product can be used to make pickled whole fresh cipollinies or product in which fresh cipollines or cipollines flavor is desired.

Fresh Shallots - retail vexar pack in the 3 oz and 16 oz. We also offer shallots in foodservice packages - 8 x 5 pound bags and also in the 4x10 pound bags.

We offer Fresh domestic shallots from Oregon, Idaho, and Colorado, Canada, France, the Netherlands and China. We offer both shallots grown from true seed (Bejo Seed) and shallots grown from sets. We carry this year round and most shallots are harvested from July to September.

Shallots have a milder and more aromatic flavor than other onions. They also are closer to the taste and appearance of garlic. Shallots have clusters of cloves that develop from a common base. Leaves are short, small, and hollow. Treat the bulbs like onions. Try shallots in sauces, stews, and meat dishes. Raw shallots also can be sliced and added to appetizers and green salads.

The product can be used to make pickled whole shallots, antipesto mixes, sauces, soups, or any other product in which fresh shallots cloves or shallot flavor is desired.

We offer the peeled shallots in the 4 x 5 pound jar or an individual 5 pound jar. Shallots are considered members of the onion family but look more like garlic.

Fresh Garlic

We offer fresh domestic garlic from California and from different countries such as China, Spain, Mexico, and Argentina. Garlic is known by its scientific name Allium sativum and it is a staple in most places on the planet. A member of the onion family, which also includes leeks and shallots, garlic has been used for cooking and medicine for thousands of years.

We offer loose white garlic in a 30 pound box and also 5 pack garlic in individual sleeves that are very convenient for retail customers.

Garlic is low in cholesterol, saturated fat, and sodium, and a source of Vitamin C. Garlic is used to treat high blood pressure, coronary disease, heart attack, and hardening of the arteries. Garlic is rich in antioxidants that help the body fight off free radicals, which contribute to Alzheimer’s disease, cancer, and heart disease.

The garlic is first cracked, peeled, washed and packed in jars or bags.

The optimum shelf life of the peeled product is approximately 3 weeks when refrigerated at 32 degrees F. The garlic is washed and ready to use.

The peeled garlic we sell is kosher certified and peeled and packed under Good Manufacturing Practices under sanitary conditions.

Fresh Ginger Root

Ginger is a flowering plant, indigenous to China and is commonly called ginger. It is harvested and used as a spice, side dish, natural remedy, and for flavoring. The root, or rhizome contains oils that give ginger its aromatic and spicy flavor and smell. A clump of ginger roots is often called a “hand”. We offer fresh Chinese Ginger year round.

Quality is characterized by skin sheen and color, size of the rhizome, and the absence of defects.

The ginger hands are washed and cleaned under Good Manufacturing Practices under sanitary conditions. Ginger will meet all USDA and FDA tolerances and requirements. Ginger hands were cleaned and washed completely and checked for quality before packaging. For optimum shelf life and quality, ginger shouldbe stored under refrigeration or in a cool dry area between 50-55 degrees F.

Ginger has no fat, sodium, or cholesterol and is a source of Vitamin C, magnesium, potassium. It also has several touted health benefits, as well as folk applications for illness such as countering nausea and indigestion. Other uses include fighting colds and flus with ginger tea, and various used to reduce inflammation and help treat arthritis, headaches, bronchitis, and some research has shown promise in lowering cholesterol levels.
